World Finals: FAQ

ASSISTANT : Can I bring a support chef to assist me during the finals?
During the competition, you cannot have a support chef or other assistant helping you, except when constructing the showpiece. An assistant can help holding parts in place while the finalist assembles them. Technical Advisors of Barry Callebaut will also be available for this purpose.

CHOCOLATE : Will the chocolate for common use be pre-crystallized?
No, the chocolate for common use will be melted, but not pre-crystallized. The finalists have to crystallize the chocolate by themselves. There will be callets/pistoles, microwave ovens, mycryo butter and marble worktops available.

COMPETITION THEME : Can my showpiece represent a myth or legend of another country?
No, the legend or myth that is worked out in the showpiece has to be typical for the country that the finalist represents.

COMPETITION THEME : Do I have to express the competition theme in all my creations?
No, only in the large and the small showpiece do you need to make the competition theme clear.

DESSERT : Can I serve my dessert in glasses instead of on plates?
Yes, the finalists are totally free to choose the presentation of their dessert. They bring their own plates or glasses and other serving material.

DESSERT : Is it possible to use the plates of the Organising Committee? It is very difficult for me to bring them.
Yes, if you order them in advance, you can use plates of the Organising Committee. Please advise whether you need shallow of flat plates.

INGREDIENTS : Can I use marzipan in my recipes? Is it considered as a basic or finished product?
Marzipan can be considered as a basic ingredient if it is processed further during the competition or used together with other ingredients in a recipe. This means that simply cutting marzipan into pieces to dip them, is not allowed as a cut praline. When the marzipan is only one layer in a pastry or praline etc, and part of a complete recipe, it's ok.

MOULDED PRALINE : Can I paint the mould of the pralines before the contest?
No, this is not allowed.

MOULDED PRALINE : I am making a liquor filling that needs quite some time to get hard. Can I make it in advance and remake the recipe at the contest?
Yes, this is allowed. The jury will compare both fillings to see if they are identical in taste.

PRALINE : My dipped praline exists of different layers, some of which are dipped, some are not. Can I bring all elements?
Yes you can bring all different layers that will make the dipped praline. Decorations cannot be brought, but have to be made in place, but you can bring the different structures.

RECIPES : Can I use flexible or silicone moulds?
Yes, you can.

SHOWPIECE : Can I bring a finished ball to include in my showpiece?
No, a ball is composed of 2 halves and should be brought in these seperate elements, to be glued together and finished in place.

SHOWPIECE : Can I choose a national myth or legend from another country?
No, the myth or legend represented in the showpiece has to be one from the country the contestant represents.
So even if the contestant has another nationality than the country he represents, it has to be a legend or myth from the represented country.

SHOWPIECE : Is it possible to integrate and showcase the moulded and hand dipped chocolates in the large chocolate showpiece?
Keep in mind the following sentence "The showpiece has to be 100% chocolate". So you can make "fake" pralines in advance (filled with chocolate) and put those on the showpiece on Saturday OR you can add the pralines afterwards (when the showpiece has been judged).

SHOWPIECE : Can I prepare a written document in French and English?
Yes, you can, but you also have to present the showpiece orally. You can use the paper or a translator if necessary.

Yes, any type is possible : powder, leaves or liquid.

SMALL SHOWPIECE : Is the sprayable surface for the small showpiece limited to 50%, as it is for the large showpiece?
No, for the small showpiece, the sprayable surface is not limited.
